Cojin Kimchi
Cojin Kimchi is a fresh summer kimchi. This style of kimchi suits Bali as it ferments quicker and retains the crunchy texture for much longer. We get all our produce from farms here in Bali the only thing not Balinese is the flavors, the spices and sauces used are all Korean made and sent to us from Jini's mother in South Korea.
We have two variations of kimchi:
- Plant Based which is built on a sauce base os soy and fermented soy paste
- Traditional which has a sauce base of fish sauce and anchovy sauce. The taste is very similar with the traditional being slight stronger flavors.
