Thai Fruits Salad

  • 1 cup fresh (or canned or frozen) pineapple cubes
  • 1 banana (sliced)
  • 1 cup mandarin orange 
  • 1 star fruit (peeled and sliced)
  • 1 to 2 cups strawberries

Steps to Make It

  • Stir the Dressing ingredients (coconut milk, lime juice, sugar) together in a cup until sugar dissolves.
  • Place all fresh fruit in a mixing bowl.  Pour the dressing over the fruit and toss well to mix.
  • Pour or scoop the fruit salad into a serving bowl or into a carved-out pineapple. For instructions, see: how to make a pineapple boat.
  • Garnish just before serving with a star fruit slice.
  • Refrigerate if you are not serving immediately.
